Wood-touched Pancakes
Using the simple pancake mix (1 egg, 1 cup flour, 1 cup milk/water, pinch of salt), add half a crushed cinnamon quill. Note - this is not ground cinnamon.
Cook in a medium head on a heavy frying pan with oil or butter - I personally recommend cast iron with butter.
When the surface has gone from cream to pale yellow, flip the pancake and cook for 2-3 minutes.
Serve with a very light spread of your favourite sweet Jam/ preserve.
Makes 3-6 pancakes (depending on size)

Date: 2008-05-25 12:50 am (UTC)For those watching their weight, the oil provides an equally good low fat cooking option. The other nie thing about pancakes is that tyhey pick p the flavours. It's one of the fewtimes I'd recommend not using olive oil - rather almond or apricot nut oil.
